Alix Makes Gougères
Preheat the oven to 200°. Pour 160 cl. of water in a medium saucepan with a few pinches of salt, add 70 gr. butter at room temperature and bring to a boil. Put the saucepan aside on the cooker and add 86 gr. of sifted flour. Stir with a wooden spoon until a smooth dough forms; go on over low heat until it dries out and stops sticking to the pan or the spoon. Put the dough in a bowl, let it cool down, beat 130 gr. of eggs, mix it to the dough, until it becomes shiny and smooth. Use a pastry bag or two spoons to lay the dough on a plater, make sure they have enough room around them to allow a nice puffing. Bake in the oven for 20 min. Don’t open the oven until the end, otherwise they might not puff up nicely.
