Sea Side Christmas
A christmas party dinner on the port of Genova.
On the menu : an endive sheltering from a pond, a piece of junk from the sea carved into a homemade cracker beside tumeric eggs, local fish with spirulina quenelle and a braided spring onion made by the local fishermen, pasta in cuttlefish ink with strombolian lava and to finish Ettore Sottsass’s latest dessert like the deadly laitance of the Erika.
